Letter frequency is the basis of classic code-breaking: in ordinary English text, E, T, A, O and I are the most common letters, so the most frequent letter in a simple substitution cipher is probably one of them. It is also handy for word-game strategy and checking pangrams.
Accented letters are counted as their plain form, and numbers and punctuation are ignored.
